Frittata di zucchine

Frittata can be served hot or at room temperature, great for last minute lunch and dinner, but it’s perfect for parties!

This recipe is good for 12.


  • 12 medium size zucchini
  • 12 eggs, (eggs white can be used)
  • 1 cup of water
  • 1 tablespoon of flour
  • Salt and pepper to taste
  • Olive oil
  • 2 cloves of garlic

In a large frying pan poor the oil, just to cover bottom of pan. Add the garlic, sliced thin.

Brown the garlic at low flame and remove pan from stove. Slice the zucchini in quarters and add to frying pan. Cook zucchini until golden and pour in a baking dish without the excess oil. In a ball beat the eggs with the water (or the whites with the water) Sift gently the flour into the eggs and beat all together. Pour the eggs in the baking pan over the zucchini. Preheat the oven at 350, bake for 20 to 30 minutes until eggs are cook.

It makes a perfect antipasto! Or main dish!

38 Sturges Commons, Westport CT – Lentil Soup

One pound of dry lentil to be soaked from the night before.

In a blender put 2 tablespoons of olive oil… followed by:

3 bay leaves

1 tablespoon, very full, of rosemary

1 teaspoon of red crushed pepper

5 cloves of garlic

4 cups of water

Liquefy all the ingredients

  • Put the ingredients in a large pot; bring to a boil. Lower the flame and add lentils (must be drained).
  • Add additional 4 cups of water to pot.
  • Add a cup of tomato sauce. Bring to boil.
  • Will cook for 1.5 – 3 hours at medium to low flame.
  • Add salt to taste.

Toast some bread with garlic and place at bottom of bowl, cover it with lentils and put a sprinkle of Parmigiano or Romano cheese on top. Buon appetito!

Real Estate Outlook

The economic outlook for real estate is never just black and white— you’ve got to look at the encouraging signs—along with the bleak— if you want a realistic picture.

The Spring market looks like it’s really warming up. Who knows, maybe we’re finally turning the corner.

Take this week’s mortgage market numbers: Applications for purchases of homes were up 8.1 percent last week, according to the Mortgage Bankers Association of America’s national survey. Purchase applications using FHA-insured mortgages– the hottest game in town— were up by 15.2 percent!

Part of the reason for the application jump: Mortgage rates continue to hover just half a point over 40-year lows. Fixed rate, 30-year loans last week averaged 5.78 percent, according to the survey. Fifteen year fixed rates averaged just 5.39 percent. 

Times may look tough but with such low rates and a large inventory of houses to choose from, real estate is still a viable investment to consider.

Berlusconi ha vinto, ed ora si spera che l’economia Italiana si ristabilisca. In Italia stanno rilasciando notizie alquanto allarmanti per il futuro. Speriamo che diminuascano le tasse, come promesso, e che riusciranno a sviluppare l’idee economiche per alleviare la popolazione da questo grande stress economico.

Celebrate an afternoon of family, fun and community while raising funds to support the homeless and other neighbors in need. IHA is sponsoring the Seventh Annual Castles in the Sand sancastle build-a-thon at Compo Beach in Westport on Saturday, may 10th, between 12:00 and 4:00 pm.

Big lots (10′ x 10′ ) are $ 100 and can accomdate up to four sand sculptors. Per la prima volta in tanti anni a Roma avremo un sindaco di destra!

First-time buyers dilemma

Home prices are dropping, but should first-time buyers jump in? If the buyer has nothing to sell is a good time to be in the market because they don’t have to face the challenge of selling a home in order to buy another.

Homes prices are dropping, there a glut of inventory to choose from and interest rates are still low. But there are some roadblocks that first-time buyers are facing.

Lending standards have gotten more stringent than they were last year. Buyers are generally required to have higher credit scores. Houses are still a bit unaffordable  and if buyers are looking for bargain-basement prices are in the wrong market. It might take longer to sell a house but sellers there aren’t willing to drastically reduce the price.

This is the best time that a first-time home buyer has had in a very long time.
